Your Two Cows Creamery product was born in Hot Springs, South Dakota at Serendipity Farmstead. There, four cows (Sally, River, Ruth and Marry Ann) are converting grass to milk for your enjoyment. These girls are all A2/A2 cows, working 24/7, rain or shine for you. In order to keep them producing high quality milk, they eat as much grass as they want plus a little bit of non-gmo, corn free, soy free grains each day.
Once the milk is obtained from the cows, it is taken to Two Cows Creamery, just 6 miles down the road. There, at the smallest milk plant in the state of South Dakota, we turn that milk into the product you are now enjoying.
We are a small batch operation making just 40 gallons at a time. We vat pasteurize to keep the temperature lower and provide a slight cook to the milk to give it a rich caramelized flavor. Then, for cultured dairy drinks, we put the good bugs in the milk and let them do their thing for a few hours, add the fruit and put it in a bottle. Our ice cream process is similar, we make a base mix, add the flavor ingredients and freeze it in our Italian made gelato freezer. It comes out the consistency of soft serve, making it easy to dispense into a pint cup.
